Gumbo Preparation

    Cook the Sausage

    In a large pot, heat the olive oil over medium heat. Add the andouille sausage and sauté until browned, about 5 minutes.

    Sauté the Vegetables

    Add the diced onion, green bell pepper, and celery to the pot. Cook until the vegetables are softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.

    Add Remaining Ingredients

    Stir in the diced tomatoes, chicken broth, bay leaves, Cajun seasoning, thyme, okra (if using), salt, and black pepper. Bring the mixture to a boil.

    Simmer the Gumbo

    Reduce the heat to low and let the gumbo simmer for about 30 minutes, stirring occasionally.

    Add Shrimp

    Add the shrimp to the pot and cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

Rice Preparation

    Cook the Rice

    In a medium saucepan, combine the Delta Blues rice and water. Bring to a boil, then reduce heat to low, cover, and let simmer for 20 minutes or until the rice is tender and water is absorbed.

Serving

    Serve the Gumbo and Rice

    Spoon the gumbo into bowls over a scoop of Delta Blues rice. Garnish with sliced green onions before serving.
