Make the Pickled Carrots
Julienne the carrot and combine it in a bowl with rice vinegar, sugar, and salt. Let it sit for at least 30 minutes to pickle.

Prepare the Marinated Cucumbers
Slice the cucumber thinly and toss it with rice vinegar, sugar (1 tbsp), and a pinch of salt. Allow to marinate for 15-20 minutes.
Cooking Tuna

Season the Tuna
Pat the yellowfin tuna steaks dry with paper towels. Season each side generously with togarashi spice blend.

Sear the Tuna
Heat a skillet over medium-high heat. Add a drizzle of oil. Once hot, add the tuna steaks and sear for 1-2 minutes on each side for medium-rare, or longer if desired.
Assembling the Dish

Plate the Ingredients
On a plate, place the lettuce leaves as a bed. Position the seared tuna steaks on top, then add the marinated cucumbers and pickled carrots around the tuna.

Drizzle with Sauce
Drizzle the Kentuckyaki sauce over the tuna and vegetables for added flavor.
