Prepare the Sausage
Slice the Andouille sausage into thin rounds or half-moons.

Chop the Vegetables
Dice the red bell pepper, onion, and celery into small pieces. Mince the garlic cloves.
Cooking

Cook the Sausage
In a large pot over medium heat, add the sliced sausage and cook until browned, about 5-7 minutes.

Sauté the Vegetables
Add the chopped red bell pepper, onion, and celery to the pot with the sausage. Sauté for about 5 minutes until the vegetables are softened.

Add Garlic
Stir in the minced garlic and cook for an additional minute until fragrant.

Combine Ingredients
Add the red kidney beans (drained and rinsed), diced tomatoes (with juice), Cajun seasoning, bay leaves, chicken broth, salt, and black pepper to the pot. Stir well to combine.

Add Rice
Bring the mixture to a boil, then add the long-grain white rice, stirring to combine.

Simmer
Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

Remove the bay leaves, taste, and adjust seasoning with salt and black pepper if needed. Serve hot.
