Method

Preparation

  1. 1

    Chop the Vegetables

Dice the bell peppers and onion into small, even pieces for even cooking.

  2. 2

    Heat the Oil

In a large skillet, heat the olive oil over medium heat.

  3. 3

    Cook the Vegetables

Add the chopped bell peppers and onion to the skillet. Sauté for about 5-7 minutes until they are soft and slightly caramelized.

  4. 4

    Season the Vegetables

Sprinkle in the salt, black pepper, cumin, and chili powder; stir to coat the vegetables evenly. Cook for an additional 2 minutes and then remove from heat.

Assembly and Cooking

  1. 5

    Prepare the Tortillas

Lay out the flour tortillas on a clean surface.

  2. 6

    Add Cheese and Vegetables

On one half of each tortilla, sprinkle a generous layer of cheddar and Monterey Jack cheese. Then, add a portion of the sautéed vegetables on top of the cheese.

  3. 7

    Fold the Tortillas

Fold each tortilla over to create a half-moon shape, pressing down lightly to seal.

  4. 8

    Cook the Quesadillas

In the same skillet used for the vegetables (add a little more oil if necessary), place the folded quesadillas in the skillet. Cook for about 3-4 minutes on each side until golden brown and the cheese is melted.

  5. 9

    Slice and Serve

Remove from heat and let cool for a minute. Slice each quesadilla into wedges and serve warm with your favorite dipping sauce.
