    Prepare the Pork Chops

    Pat the pork chops dry with paper towels. Season both sides generously with salt, black pepper, garlic powder, and fresh thyme or rosemary. Drizzle olive oil over the chops and rub the spices into the meat. Let the chops marinate for at least 20 minutes at room temperature.

    Grill or Fry the Pork Chops

    Preheat your grill to medium-high heat or heat a skillet over medium-high heat on the stove. If grilling, place the pork chops directly on the grill. If frying, add a little more olive oil to the skillet. Cook the pork chops for 6-7 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from heat and let rest for 5 minutes before serving.

    In a saucepan over medium heat, melt the butter. Add the finely chopped onion and sauté until translucent, about 3-4 minutes. Stir in the flour and cook for another minute until it forms a paste.

    Gradually whisk in the beef broth, ensuring there are no lumps. Bring the mixture to a simmer, stirring continuously until the gravy thickens, about 5-7 minutes. Add Worcestershire sauce, salt, and black pepper to taste.
