    Clean the Oysters

    Rinse the fresh oysters under cold water to remove any sand or debris. Carefully shuck the oysters, keeping the liquor in the shell. Place the shucked oysters on a baking tray.

    Sauté the Vegetables

    In a skillet, melt the butter over medium heat. Add the finely chopped shallots and minced garlic. Sauté for 2-3 minutes until the shallots are translucent.

Making the Topping

    Add Spinach

    Stir in the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and black pepper to taste.

    Mix Ingredients

    Remove from heat and mix in the grated Parmesan cheese and lemon juice. Then, fold in the bread crumbs until well combined.

Assemble and Bake

    Top the Oysters

    Spoon the spinach mixture generously over each oyster, covering them completely.

    Bake

    Preheat the oven to 400°F (200°C). Bake the oysters for 10-12 minutes or until the topping is golden and bubbly.

    Remove from the oven and let cool for a minute. Serve hot with lemon wedges on the side.
