Preparing the Oysters

Select Fresh Oysters
Choose fresh oysters from your local seafood market. Ensure they are alive, with closed shells.

Clean the Oysters
Rinse the oysters under cold running water to remove any sand or debris.

Shuck the Oysters
Using an oyster knife, carefully insert the knife into the hinge of each oyster and twist it to open. Remove the top shell and discard it.
Making the Mignonette Sauce

Combine Ingredients
In a small bowl, combine the red wine vinegar, finely minced shallots, and cracked black pepper.

Allow the mignonette sauce to sit for at least 15 minutes to let the flavors meld together.

Arrange the shucked oysters on a serving platter, keeping the oyster liquor (the liquid inside) intact.
