Preheat and Prepare
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Cut in Butter
Cut the cold butter into the flour mixture using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir gently until just combined. Do not overmix.

Shape the Dough
Turn the dough onto a lightly floured surface and pat it into a 1-inch thick rectangle. Cut out biscuits using a round cutter or a glass.

Transfer the biscuits to the prepared baking sheet and bake for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.
Gravy

Cook Sausage
In a large skillet over medium heat, cook the ground sausage until browned and cooked through, breaking it apart with a spatula.

Sprinkle the flour over the cooked sausage and mix well to incorporate. Cook for about 1-2 minutes.

Add Milk
Gradually pour in the milk while stirring constantly to avoid lumps. Bring the mixture to a simmer.

Add salt, black pepper, and red pepper flakes. Stir and simmer for about 5 minutes until the gravy thickens.

Split the warm biscuits in half and ladle the gravy over the top. Add optional toppings such as chopped green onions and shredded cheese if desired.
