Method

Prepare the Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 tsp of salt. Reduce heat to low and simmer, stirring frequently until the grits are thick and creamy, about 20-25 minutes.

    Add Goat Cheese and Butter

    Once the grits are cooked, stir in 4 oz of goat cheese and 2 tbs of butter until melted and well combined. Keep warm.

Cook the Shrimp & Sauce

    Sauté Tasso Ham

    In a large skillet, heat 2 tbs of olive oil over medium heat. Add 4 oz of diced Tasso ham and cook until it starts to brown, about 3-4 minutes.

    Add Garlic and Tomatoes

    Add 2 tbs of minced garlic and 1 cup of diced tomatoes to the skillet. Cook for another 3-4 minutes until the tomatoes soften.

    Cook the Shrimp

    Add 1 lb of Gulf shrimp to the skillet. Season with 1 tsp of black pepper and 1 tsp of cayenne pepper. Cook until the shrimp are pink and opaque, about 5-7 minutes.

    Add Kale and Chicken Broth

    Stir in 2 cups of chopped kale and 1 cup of chicken broth. Simmer for an additional 3-5 minutes until the kale is wilted.

Serve

    Plate the Dish

    Spoon the creamy goat cheese grits onto plates and top with the shrimp and sauce mixture. Serve hot.
