Preparing the Salmon

    Marinate the Salmon

    In a bowl, mix together olive oil, lemon juice, garlic powder, salt, black pepper, and fresh dill (if using). Add the salmon fillets to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes in the refrigerator.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Once the grill is hot, place the marinated salmon fillets directly onto the grill grates. Grill for about 4-5 minutes on each side, or until the salmon flakes easily with a fork.

Preparing the Sides

    Cook the Asparagus

    Drizzle a tablespoon of olive oil over the asparagus and sprinkle with salt. Toss to coat. Grill alongside the salmon for about 5-7 minutes, turning occasionally until tender.

    Boil the Baby Potatoes

    In a pot, place the baby potatoes and cover with water. Add a teaspoon of salt and bring to a boil. Cook for about 15-20 minutes until fork-tender. Drain and toss with butter.

    In a bowl, mix together the cornmeal, baking powder, and sugar. In another bowl, whisk together the milk and egg. Combine both mixtures and stir until just combined. Preheat a skillet over medium heat and pour in the cornbread mixture. Cook for about 20-25 minutes until golden brown and a toothpick comes out clean.
