    Wash and peel the Russet potatoes. Cut them into thin strips to create fries.

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the cut potatoes to the hot oil in batches, frying until they are golden brown and crispy, about 5-7 minutes per batch.

    Drain and Season

    Remove the fries from the oil and drain on paper towels. Immediately sprinkle with salt while still hot.

    Make the Roux

    In a saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the all-purpose flour to create a roux, cooking for about 2 minutes until it turns a light golden color.

    Add Beef Broth

    Slowly whisk in the beef broth, ensuring there are no lumps. Continue to cook, whisking constantly, until the gravy thickens, about 5 minutes.

    Season the Gravy

    Stir in black pepper, garlic powder, onion powder, Worcestershire sauce, and salt. Allow the gravy to simmer for an additional 2-3 minutes.

    Assemble the Gravy Fries

    Take a serving of fries and place them on a plate. Generously ladle the hot beef gravy over the fries.

    Sprinkle grated Gruyère cheese over the gravy fries and add pickled chiles to taste.
