Prepare the Tomatoes
Slice the green tomatoes into 1/2 inch thick slices. Sprinkle salt on both sides and let them sit for about 10 minutes to draw out moisture.

Set Up the Breading Station
In one bowl, combine the flour, salt, black pepper, and cayenne pepper. In a second bowl, whisk together the buttermilk and eggs. In a third bowl, place the cornmeal.

Bread the Tomatoes
Dip each tomato slice first in the flour mixture, then in the buttermilk mixture, and finally in the cornmeal, ensuring they are well coated.

Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat. Fry the breaded tomato slices until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare the Shrimp
Peel and devein the shrimp. Pat them dry with paper towels.

Season the Shrimp
In a bowl, mix together the paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Toss the shrimp in the spice mix until evenly coated.

Add the Crawfish and Sauce
Stir in the garlic and cook for 1 minute until fragrant. Then add the crawfish tails, tomato sauce, chicken broth, Cajun seasoning, salt, and black pepper. Bring to a simmer.

Simmer the Étouffée
Reduce the heat to low and let it simmer for 20-25 minutes, stirring occasionally. If the mixture gets too thick, add a little more chicken broth.

Serve the Étouffée
Serve the crawfish étouffée over cooked rice and top with blackened shrimp. Enjoy with fried green tomatoes on the side.
