Prepare the Battering Station
In three separate bowls, set up a breading station. In the first bowl, combine the cornmeal, flour, cayenne pepper, paprika, salt, and black pepper. In the second bowl, pour the buttermilk. In the third bowl, beat the eggs.

Coat the Catfish
Take each catfish fillet and first dip it in the buttermilk, allowing excess to drip off. Then dredge it in the cornmeal mixture, ensuring it is well coated. Repeat for all fillets.

Heat the Oil
In a large, deep skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the coated catfish fillets in the hot oil. Fry for about 5-7 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to remove them and place on paper towels to drain excess oil.

In a large mixing bowl, combine the cornmeal, flour, baking powder, sugar, and salt. Mix well.

Fry the Hushpuppies
Using a tablespoon or small scoop, drop spoonfuls of the batter into the hot oil. Fry until golden brown, approximately 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
