Preparing the Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients
In a bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well.

Coat the Calamari
Dredge the calamari rings in the dry mixture, ensuring they are evenly coated.
Making the Garlic Chile Sauce

Prepare the Sauce
In a small bowl, combine minced garlic, red chili flakes, finely chopped jalapeño, soy sauce, lime juice, and honey.

Add Herbs
Stir in the chopped cilantro and mint until well combined. Set aside.
Preparing Cabbage Slaw

Mix the Slaw
In a large bowl, combine the shredded green cabbage with lime juice and salt. Toss well to combine.
Frying the Calamari

Heat the Oil
In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the coated calamari rings in batches to the hot oil. Fry for 2-3 minutes until they are golden brown and crispy.
