    Dip each redfish fillet into the egg mixture, allowing excess to drip off, then dredge in the flour-cornmeal mixture until evenly coated.

    In a large frying pan, heat vegetable oil over medium-high heat. Once hot, fry the breaded fish fillets for about 4-5 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain.

Asian Slaw

    In a large bowl, combine the shredded cabbage, shredded carrots, sliced green onions, and chopped cilantro.

    In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, and sugar until the sugar dissolves.

    Combine Slaw and Dressing

    Pour the dressing over the slaw mixture and toss until everything is well coated. Let it sit for about 10 minutes to allow flavors to meld.

    Preheat the oven to 425°F (220°C). Cut the potatoes into fries, ensuring they are of even size for consistent cooking.

    In a bowl, toss the cut potatoes with olive oil, salt, black pepper, and paprika.

    Spread the seasoned fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
