Cornbread Preparation

Prepare the Cornbread Batter
In another bowl, whisk together 1 cup of buttermilk, 1/4 cup of vegetable oil, and 2 large eggs. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Bake the Cornbread
Pour the batter into a greased 9x9 inch baking pan. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve
Allow the cornbread to cool for 10 minutes in the pan before slicing and serving.

Prepare Coleslaw
In a large bowl, combine 4 cups of shredded cabbage, 1 cup of grated carrots, and 1 cup of coleslaw dressing. Toss until the vegetables are well coated. Refrigerate until ready to serve.

Prepare Green Beans
Trim the ends of 1 pound of fresh green beans. Steam or boil in salted water for 5-7 minutes until bright green and tender-crisp. Season with salt and pepper to taste.

Make Macaroni and Cheese
Cook 1 pound of elbow macaroni according to package instructions. Drain and set aside. In a saucepan, melt 1/4 cup of butter. Stir in 1/4 cup of all-purpose flour and cook for 1 minute. Gradually whisk in 4 cups of milk and bring to a simmer. Stir in 4 cups of shredded cheese until melted. Combine with the macaroni.
