Method
Catfish Preparation

Prepare the Beer Batter
In a bowl, mix together cornmeal, flour, baking powder, paprika, cayenne pepper, salt, and black pepper. Slowly whisk in the beer until the batter is smooth and well combined.

Batter the Catfish
Dip the catfish fillets into the beer batter until fully coated. Allow excess batter to drip off.

Fry the Catfish
In a large pot or deep fryer, heat oil to 350°F (175°C). Carefully place the battered catfish in the hot oil and fry for 3-5 minutes until golden brown. Remove and drain on paper towels.

Mix Tartar Sauce Ingredients
In a bowl, combine mayonnaise, dill pickles, capers, lemon juice, salt, and black pepper. Mix well and refrigerate until ready to use.

Make the Hushpuppies Batter
In a mixing bowl, combine cornmeal, flour, baking powder, beaten egg, milk, and chopped green onions. Stir until just combined.

Fry the Hushpuppies
In a separate pot, heat oil to 350°F (175°C). Drop spoonfuls of the hushpuppy batter into the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Fry the Potatoes
In a deep fryer or large pot, heat oil to 350°F (175°C). Add the cut fries in batches and fry for 5-7 minutes until crispy and golden. Season with salt after frying.
