Preparation

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Ingredients

    While the pasta is cooking, prepare the vegetables and seafood. Chop the onion, bell pepper, and dice the tomatoes. Slice the shiitake mushrooms and set aside.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes. Add the minced garlic and shiitake mushrooms, stirring for another 2 minutes.

    Add the Seafood

    Add the Gulf shrimp and crawfish tails to the skillet. Sprinkle with Cajun seasoning, salt, and pepper, and cook until the shrimp turn pink and opaque, about 3-4 minutes.

    Make the Sauce

    Stir in the diced tomatoes and tasso ham. Pour in the heavy cream, bringing the mixture to a simmer. Cook for an additional 5 minutes, stirring occasionally until the sauce thickens.

    Combine with Pasta

    Add the cooked linguine to the skillet and toss everything together until the pasta is well coated with the sauce. Adjust seasoning as needed.

Serving

    Plate and Serve

    Serve the Cajun seafood pasta hot, garnished with fresh parsley or additional Cajun seasoning if desired.
