Prepare the Pasta

Cook the Penne Pasta
In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
Cook the Chicken and Sauce

Sauté the Chicken
In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and Cajun seasoning. Cook the chicken in the skillet for about 5-7 minutes on each side, or until fully cooked and browned. Remove from the skillet and let rest before slicing.

Prepare the Tasso Cream Sauce
In the same skillet, add the diced tasso ham, shallots, and minced garlic. Sauté for about 2-3 minutes until the shallots are translucent. Pour in the heavy cream and bring to a simmer. Allow to cook for about 3-4 minutes, stirring occasionally, until slightly thickened.

Incorporate the Vegetables
Add the diced bell pepper, sliced zucchini, and cherry tomatoes to the skillet with the cream sauce. Cook for an additional 3-5 minutes, until the vegetables are tender.
Combine and Serve

Combine the Pasta and Sauce
Slice the cooked chicken and add it back to the skillet along with the cooked penne pasta. Toss everything together to ensure the pasta is well coated with the tasso cream sauce.

Serve the Cajun chicken pasta hot, garnished with grated Parmesan cheese and chopped fresh parsley.
