Prepare glass and syrup
If you have pre-made demerara/simple syrup, skip to next step. If making syrup from granulated sugar: combine 1/2 cup demerara sugar and 1/2 cup hot water in a small heatproof container, stir until sugar dissolves completely, let cool to room temperature. Measure 1/4 oz (about 1/2 tablespoon) of this syrup for the cocktail.
Build the cocktail
Place a mixing glass or an old-fashioned glass on the bar. Add the 1/4 oz demerara syrup into the mixing glass. Add 3 dashes Angostura bitters and 1 dash orange bitters (if using). Pour in 2 oz bourbon or rye whiskey.
Strain and serve
Place one large ice cube in a chilled old-fashioned glass (or several large cubes). Strain the chilled cocktail over the ice.
Garnish and finish
Express the oils from an orange peel over the drink by holding the peel over the glass skin-side down and giving it a firm snap so the oils spray onto the surface. Rub the peel around the rim and drop it into the glass. Optionally add a Luxardo or maraschino cherry on a pick. Serve immediately.
