Method
Seaglass Cocktail
Prepare and chill glass
If desired, chill a highball or coupe glass in the freezer for 5–10 minutes. Have a lime wheel and mint ready for garnish.
Dry shake
If using egg white: add white rum, blue curaçao, lime juice, simple syrup, melon liqueur and egg white to a cocktail shaker. Dry shake (no ice) vigorously for 15 seconds to emulsify and build foam.
Wet shake
Add ice to the shaker (about 1 cup) and shake vigorously for 10–15 seconds until well chilled and slightly frothy.
Garnish
Finish with a lime wheel on the rim and a mint sprig gently slapped to release aroma. Serve immediately.
Chema Seaglass Snack (Savory Bite)
Make spread
In a small bowl, stir together the softened cream cheese, chopped dill, lemon zest and black pepper until smooth. Taste and adjust seasoning.
Assemble bites
Spread about 1/4 tablespoon of the cream cheese mixture onto each cucumber round (or onto toasted baguette slices/crackers). Fold or lay a piece of smoked salmon over each, then top with a few capers.
Plate and serve
Arrange the bites on a small platter. Garnish with an extra small sprig of dill or a light grind of black pepper if desired. Serve immediately alongside the Seaglass Cocktail.
