Prep & Cook Potatoes

Prepare potatoes

Peel the russet potatoes and cut them into even 1 to 1-1/2 inch chunks so they cook uniformly. Rinse the pieces in cold water to remove excess starch.

Cook potatoes with garlic

Place the potato chunks and the whole garlic cloves in a large pot and cover with cold water by about 1 inch. Add 1 teaspoon of salt. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are fork-tender, about 15–20 minutes depending on chunk size.

Drain and steam-dry

Drain the potatoes and garlic in a colander. Return them to the hot pot off the heat and let them steam-dry for 1–2 minutes to remove excess moisture—this improves texture.

Mashing & Enrichment

Warm dairy

While potatoes cook, combine the milk and butter in a small saucepan and warm gently over low heat until butter is melted and mixture is hot but not boiling. Keeping the dairy warm helps it absorb into the potatoes smoothly.

Mash potatoes

Pass the potatoes and cooked garlic through a potato ricer or mash with a hand masher until smooth. For the silkiest texture, use a ricer or food mill. Transfer the mashed potatoes back to the warm pot set over very low heat.

Incorporate dairy and cheeses

Slowly add the warmed milk-butter mixture to the mashed potatoes, stirring gently with a spatula or wooden spoon until incorporated and smooth. Add the cream cheese and fold in until melted and combined. Stir in the grated sharp cheddar a little at a time until melted and fully incorporated, yielding a creamy, cheesy puree.

Season

Season the puree with the remaining 1/2 teaspoon salt (taste and adjust as needed), freshly ground black pepper, and a pinch (about 1/8 tsp) of ground nutmeg. Fold in the chopped chives.

Finish & Serve

Transfer the cheddar potato puree to a warmed serving bowl. If desired, sprinkle the extra shredded cheddar over the top and briefly place under a broiler for 1–2 minutes until the cheese just melts and turns lightly golden (watch closely). Drizzle the melted butter over the surface for a glossy finish.

Serve immediately while hot. Leftovers can be cooled, refrigerated in an airtight container for up to 3 days, and gently reheated with a splash of milk to restore creaminess.
