Preheat and prepare

Preheat your waffle iron according to the manufacturer's instructions to medium-high heat. Lightly brush or spray the plates with a small amount of vegetable oil (about 1 tsp) so waffles won't stick.

Whisk dry ingredients

In a large bowl, whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon fine salt until evenly combined.

Combine wet ingredients

In a separate bowl or large measuring cup, whisk 2 cups buttermilk with 2 large eggs until smooth. Add 1/2 cup melted and slightly cooled unsalted butter and 1 teaspoon vanilla extract, then whisk until fully incorporated.

Mix batter

Make a well in the dry ingredients and pour in the wet mixture. Gently fold with a spatula until just combined and there are no large pockets of flour. A few small lumps are fine — do not overmix. Let the batter rest for 5–10 minutes; this hydrates the flour and helps create a tender waffle.

Cook waffles

Working with your preheated waffle iron, pour a portion of batter (amount depends on your iron — typically 1/2 to 3/4 cup) onto the center of the plates, spreading slightly toward the edges but not overfilling. Close the lid and cook according to your waffle iron's instructions until waffles are golden brown and crisp, typically 3–5 minutes. Repeat with remaining batter, brushing the iron with a little oil as needed between batches.

Keep warm (optional)

If making multiple waffles, keep finished waffles warm on a baking sheet in a single layer in a 200°F (95°C) oven while you cook the rest so they stay crisp.

Serve

Transfer waffles to plates. Top with 1–2 tablespoons unsalted butter if desired and drizzle with pure maple syrup (about 2 tablespoons per waffle or to taste). Serve immediately.

Storage

Cool leftover waffles completely, then store in an airtight container in the refrigerator for up to 2 days or freeze for up to 1 month. Reheat frozen waffles in a toaster or oven until crisp.
