Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.
Make the Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Gradually add water to create a smooth batter.
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Brussels Sprouts
Dip each Brussels sprout half into the batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per batch.
Drain and Serve
Remove the fried Brussels sprouts with a slotted spoon and drain on paper towels. Serve immediately with lemon wedges on the side.
