Prepare protein
Heat 1 tsp oil in a 10-inch skillet over medium-high heat. Add 12 oz ground beef (or shredded cooked chicken). Cook beef, breaking up with a spatula, until browned and cooked through, about 6–8 minutes. Drain excess fat if necessary.

Lower heat to medium. Stir in 2 tsp taco seasoning and 3 tbsp water. Simmer, stirring occasionally, until the sauce is thickened and coats the meat, about 2–3 minutes. Taste and adjust salt (use up to the 1 tsp called for across the recipe) and pepper as desired.

Assemble tacos: place 3 warmed tortillas on a work surface. Divide the seasoned meat evenly among them. Top each with 1 tbsp shredded cheese, 1 tbsp shredded lettuce, 1 tbsp diced tomato, and a sprinkle of diced onion if using. Add 1 tsp sour cream and 1 tsp salsa or hot sauce per taco if desired.

Serve immediately so the tortillas stay soft. Leftover filling can be refrigerated for up to 3 days.

Rinse rice briefly under cold water until water runs mostly clear to remove excess starch. Drain well.

In a small saucepan, combine 3 oz (about 3/8 cup) rinsed rice, 1/2 cup water, 1 tsp oil or butter, and 1/4 tsp salt. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer gently for 12–15 minutes, or until water is absorbed and rice is tender.

Place 1/2 cup canned refried beans in a small saucepan over low heat. Add 2 tbsp water (or reserved bean liquid), 1/2 tsp butter or oil, 1/8 tsp ground cumin (optional), and 1/8 tsp salt.

Stir frequently and cook gently for 3–5 minutes until warmed through and smooth. If too thick, add water 1 tsp at a time to reach desired consistency. Taste and adjust seasoning.
Drink

Fill a medium glass with 1 cup ice. Pour 16 oz of your chosen beverage (lemonade, iced tea, or cola) over the ice. Stir briefly and serve chilled alongside the tacos and sides.
