    Make the spiced sugar syrup

    Combine 1 cup water, granulated sugar and brown sugar in a small saucepan over medium heat. Stir gently until sugars dissolve. Add cinnamon stick, coriander seeds, dried orange peel (or grated zest), and a small pinch of freshly grated nutmeg. Bring to a gentle simmer — do not boil vigorously — and let simmer for 6–8 minutes to extract flavors.

    Infuse and finish syrup

    Remove saucepan from heat. Let the syrup steep with the spices for 10–15 minutes, covered, to deepen the flavor. After steeping, strain the syrup through a fine mesh sieve into a heatproof container, pressing on solids to extract as much liquid as possible. Discard solids. While syrup is still warm, stir in vanilla extract, lime juice and lemon juice. If you want a darker, more authentic cola color, stir in about 1 teaspoon of homemade caramel color (see note) or a small amount of regular dark caramel syrup. Taste and adjust: add up to 1/2 teaspoon more lime or 1/2 teaspoon more vanilla if desired. Cool syrup to room temperature, then chill in the refrigerator until cold (at least 30 minutes). This recipe yields about 120–150 ml of syrup concentrate.

    Note — homemade caramel color

    To make a quick burnt-sugar caramel color: place 1 tablespoon granulated sugar in a small dry skillet over medium-low heat. Watch carefully as it melts and turns amber-brown. Once deep amber, remove from heat and carefully add 1 teaspoon hot water (it will steam). Stir to combine into a small dark syrup. Use sparingly — a teaspoon adds color without noticeable burnt taste.

    Mix the soda

    Chill a 500 ml bottle or large glass. Add 90–110 ml of the prepared cola syrup concentrate to the chilled bottle or serving vessel. The exact amount depends on how sweet/strong you prefer: start with 90 ml for a more balanced soda, 110 ml for a sweeter/stronger taste. Slowly pour 450 ml chilled carbonated water into the bottle, gently stirring or inverting once to combine — avoid vigorous stirring to preserve carbonation. Taste and adjust: add a few ml more syrup if you want it sweeter or more flavored.

    Serve

    Add ice if desired and garnish with a lime wheel or wedge. Serve immediately chilled. Keeps refrigerated: syrup concentrate will keep in a sealed container for up to 2 weeks; mixed soda is best consumed immediately for maximum fizz.
