    Prepare oil and tortillas

    Pour 1 cup neutral oil into a large skillet or sauté pan to a depth of about 1/4 inch and heat over medium-high until it reaches 350°F (or a small piece of tortilla sizzles immediately). Pat tortillas dry with paper towel and lightly salt both sides (about 1 tsp divided).

    Fry tortillas until crisp and golden: Working in batches if necessary, fry each tortilla 40–60 seconds per side until edges are blistered and center is crisp but not over-browned. Use tongs to transfer tortillas to a paper towel–lined rack or plate to drain. Keep warm in a low oven (200°F / 95°C) folded slightly or flat.

House Salsa (Ranchero Salsa)

    Roast and blister tomatoes and jalapeño

    Heat a dry skillet or comal over medium-high. Place whole roma tomatoes and jalapeño directly on the hot surface and roast, turning occasionally, until skins are well blistered and softened (8–10 minutes). Alternatively, broil on high for 6–8 minutes, turning as needed.

    Sear garlic

    Lightly char the unpeeled garlic cloves in the same pan for 1–2 minutes until fragrant; remove from heat.

    Blend salsa

    Trim stems from roasted tomatoes and jalapeño (remove seeds from jalapeño for milder salsa if desired). Peel garlic. Place tomatoes, jalapeño, garlic, 1/2 of the chopped onion, cilantro, lime juice, 1 tsp vegetable oil, cumin, 3/4 tsp salt, and 1/4 tsp black pepper in a blender or food processor. Pulse to a slightly chunky consistency (do not overblend; some texture should remain). Taste and adjust salt or lime as needed. Transfer to a bowl and keep warm or at room temperature.

Eggs & Assembly

    Fry eggs

    Wipe out a clean nonstick skillet and heat over medium. Add 2 tbs butter and allow to foam. Crack eggs into the pan (work in two batches if needed) and fry until whites are set and edges are slightly lacy, but yolks are still runny, about 2–3 minutes. For over-easy, flip and cook 15–30 seconds more. Season each egg with a light pinch of salt.

    Assemble plates

    Place one crispy tortilla on each plate. Spoon about 1/4–1/3 cup house salsa onto each tortilla, spreading evenly but leaving a small border. Gently place a fried egg on top of the salsa.

    Finish and garnish

    Sprinkle each plate with about 2 tbsp shredded queso fresco (or cotija), scatter remaining raw chopped onion if desired, add pickled jalapeños and sliced avocado (if using), and garnish with fresh cilantro leaves. Serve immediately so tortillas remain crisp and egg yolks run into the salsa when cut.
