Make batter
In a medium bowl whisk together the flour (3 tbs), sugar (1 tsp), baking powder (1 tsp) and a pinch of salt until combined. In a separate small bowl whisk milk (3/4 cup), 1/2 of a large egg (beat one egg and use roughly half), melted butter (1 tbs) and vanilla (1/4 tsp). Pour the wet ingredients into the dry and stir gently until just combined; small lumps are fine. Let rest 5 minutes while you heat the pan.

Cook pancakes
Heat a nonstick skillet or griddle over medium heat and add 1 tsp butter or 1/2 tbs oil to coat. When the pan is hot (a drop of batter should sizzle), spoon half the batter (about 1/3 to 1/2 cup) into two rounds to form two large pancakes. Cook until bubbles form on the surface and edges set, about 2–3 minutes. Flip and cook 1–2 minutes more until golden and cooked through. Keep warm on a plate tented with foil while you finish other components. Re-grease pan if necessary.

Serve
Stack the two pancakes, add 2 tbs maple syrup or preferred topping if desired and hold warm while plating eggs, bacon and hashbrowns.
Bacon (2 strips)

Cook bacon first or alongside hashbrowns. Place a cold skillet over medium heat and lay the 2 bacon strips in a single layer. Optionally add 1 tsp water to reduce splatter. Cook, turning occasionally, until fat renders and bacon reaches desired crispness, 6–10 minutes depending on thickness. Transfer to a paper towel–lined plate to drain and keep warm.
Hashbrowns (single serving)

While bacon cooks (or after), wipe out excess bacon fat leaving about 1 tsp in the pan or use a separate skillet. Add 1 tbs butter or oil over medium-high heat. When hot, add the chopped onion (2 tbs) and sauté 1–2 minutes until soft. Add the thawed, well-drained shredded hashbrowns (1 cup). Spread into an even layer and press down gently with a spatula. Season with 1/2 tsp salt, 1/4 tsp pepper and 1/8 tsp smoked paprika. Cook without stirring 3–4 minutes to get a golden crust, then flip or scramble and cook another 3–4 minutes until crisp and hot. Adjust heat so they brown but do not burn. Keep warm with bacon and pancakes.
Eggs (2 eggs)

Use a separate small nonstick skillet heated over medium-low with 1 tsp butter or oil. Crack eggs into a bowl to inspect, then add to the pan. For sunny-side-up: cook gently until whites are set but yolks still runny, about 3–4 minutes; cover for 30–60 seconds if whites need more set. For over-easy: cook until whites set, flip carefully and cook 15–30 seconds more. Season with 1/4 tsp salt and a pinch of pepper. Remove from pan and plate immediately.
Plating and timing

Arrange on a plate: two pancakes (stacked) with syrup on the side, two eggs cooked to preference, two bacon strips and a scoop of crispy hashbrowns. Aim to start bacon first, then hashbrowns, then pancakes and eggs so everything finishes warm. Total prep coordination should allow serving everything hot.
