    Marinate steak

    In a bowl or zip-top bag combine lime juice, orange juice, soy sauce, olive oil, minced garlic, cumin, chili powder, oregano, salt, and black pepper. Add the steak, coat well, and refrigerate at least 30 minutes and up to 4 hours.

    Cook steak

    Remove steak from marinade and pat dry. Heat a heavy skillet or grill pan over high heat until very hot (or preheat grill to high). Sear steak 3–5 minutes per side for medium-rare (thinner cuts less time). Cook until desired doneness. Transfer to a cutting board and let rest 5–10 minutes, then slice thinly against the grain into bite-sized strips.

    Prepare potatoes

    While steak marinates, cut potatoes into 1/3–1/2-inch thick fries. Rinse under cold water to remove excess starch, then pat thoroughly dry with towels.

    Cook fries

    Heat oil in a deep skillet or pot to 325°F (160°C) for a first fry. Fry potatoes in batches 3–4 minutes until slightly tender but not browned; remove and drain on paper towels. Increase oil temperature to 375°F (190°C) and fry batches again 2–3 minutes until golden and crispy. Drain on paper towels and immediately season with salt.

    Alternative oven method

    Toss fries with 1–2 tbsp oil and spread on a baking sheet in a single layer. Roast at 425°F (220°C) for 25–30 minutes, flipping halfway, until crisp and golden. Season with salt.

Assembly & Toppings

    Warm tortillas

    Warm each flour tortilla briefly on a hot dry skillet or in the oven (wrapped in foil) for about 20–30 seconds per side so they are pliable.

    Assemble burrito

    Lay a warmed tortilla on a flat surface. In the center, layer about 3–4 oz (roughly 1/4 of cooked steak) of sliced carne asada, a handful (about 1/2 cup) of hot fries, 1/3–1/4 cup shredded cheese, a few slices of avocado, and about 2 tbsp sour cream. Add a sprinkle of chopped cilantro and a dash of hot sauce if desired. Squeeze a little lime over the filling.

    Fold burrito

    Fold the sides over the filling, then roll tightly from one end to the other to form a sealed burrito. Place seam-side down and press gently. If you like a crisp exterior, sear the burrito seam-side down in a hot skillet with a little oil or butter 1–2 minutes per side until golden.

    Serve

    Slice burrito in half if desired and serve immediately with extra sour cream, lime wedges, and hot sauce on the side.
