Season the bistro filets with salt and black pepper on both sides. In a small bowl, mix together the ground cumin and ground coriander. Rub this spice blend all over the beef filets.
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned bistro filets to the skillet. Sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.
Remove the filets from the skillet and let them rest for about 5 minutes before slicing.
