Prepare the Salmon
Rub the salmon filets with olive oil and season generously with cajun seasoning, salt, and pepper.
Blacken the Salmon
Heat a skillet over medium-high heat. Once hot, add the salmon filets and cook for about 4-5 minutes on each side, or until the salmon is cooked through and has a nice blackened crust.
Prepare the Salad
While the salmon is cooking, chop the tomato and thinly slice the red onion. In a large bowl, combine the spring mix, tomato, and onion.
Dress the Salad
Drizzle balsamic vinaigrette over the salad mixture and toss gently to coat.
Assemble the Dish
Once the salmon is cooked, place it on top of the dressed salad. Serve immediately.
