Buffalo Chicken

Prepare and pound chicken
If chicken breasts are thick, butterfly or place between plastic wrap and pound to an even 1/2-inch thickness for even cooking.

Season
Pat the chicken dry with paper towels. Rub with 1 tablespoon olive oil, then sprinkle garlic powder, onion powder, salt, and black pepper on both sides.

Cook chicken
Heat a large skillet over medium-high heat. When hot, add the seasoned chicken and cook 4–5 minutes per side until internal temperature reaches 165°F (74°C) and juices run clear. Remove chicken to a cutting board and let rest 5 minutes.

Make buffalo sauce and coat
While the chicken rests, melt the 2 tablespoons butter in the same skillet over low heat or in a small saucepan. Stir in 1 tablespoon hot sauce until combined. Slice or shred the rested chicken into bite-sized strips, return to the skillet, and toss with the butter-hot sauce mixture until evenly coated. Taste and add up to 1 teaspoon extra hot sauce if you prefer it spicier.

Warm tortillas
Warm the flour tortillas for 10–15 seconds per side in a dry skillet over medium heat or for 10 seconds in the microwave wrapped in a damp paper towel to make them pliable.

Assemble wraps
Lay a warm tortilla flat. Spread about 2 tablespoons of ranch or blue cheese dressing down the center of each tortilla. Place about 3/4 cup shredded romaine, a few slices of tomato, a little red onion, 1/4 cup shredded cheese, and a portion (about 1/4 lb cooked) of the buffalo chicken onto the tortilla. Sprinkle with about 2 tablespoons blue cheese crumbles if using and a pinch of chopped cilantro or parsley.

Fold and secure
Fold the bottom edge up over the filling, fold the sides in, and roll tightly to form a wrap. If desired, secure with a toothpick or wrap in parchment paper to hold shape.

Optional crisping
For a warm, slightly crisp exterior, place the assembled wrap seam-side down in a skillet over medium heat and press lightly for 1–2 minutes per side until golden and heated through.

Slice the wrap in half on the diagonal and serve immediately with extra ranch or blue cheese dressing and additional hot sauce on the side.
