Method
Prepare Simple Syrup & Vanilla
- 1
Make simple syrup
Combine 0.75 cups granulated sugar and 0.75 cups water in a small saucepan. Heat over medium, stirring until the sugar fully dissolves. Remove from heat and let cool to room temperature.
- 2
If using vanilla bean paste or extract, stir 0.5 tsp into the cooled simple syrup so the vanilla flavor distributes evenly. If you used a vanilla bean, scrape seeds (about 0.5 tsp worth) into the syrup and add the scraped pod while it cools, then remove the pod before using.
Fruit Prep
- 3
If using fresh passion fruit: halve fruit and scoop out pulp and seeds into a bowl. Strain optionally through a sieve if you want juice without seeds, reserving 2 tablespoons of seeds/pulp for garnish. Measure 1 cup of pulp (with seeds) for the drink. If using frozen pulp, thaw and stir to combine.
- 4
Juice limes to yield 0.5 cups (about 2 medium limes). Reserve one lime wedge for muddling and one wheel for garnish.
Assemble the Swizzle
- 5
In a cocktail shaker or sturdy mixing glass, add the lime wedge reserved for muddling and lightly muddle to release oils and a bit of juice (do not pulverize the peel).
- 6
Add to the shaker: 1 cup passion fruit pulp, 0.5 cup fresh lime juice, 0.75 cup cooled vanilla-infused simple syrup, and 1 tablespoon honey (if using). Stir briefly to combine.
- 7
Fill a tall glass (a Collins or highball glass) with crushed ice about three-quarters full (roughly 1.5 to 2 cups crushed ice). Pour the passion fruit-lime mixture over the ice, leaving room for sparkling water.
- 8
Top with 1 cup cold sparkling water or club soda. To create the classic swizzle texture: using a swizzle stick or a long bar spoon, vigorously stir or 'swizzle' the drink between your palms (or spin the swizzle stick) until the glass becomes frosty on the outside and the mixture is well integrated, about 10–20 seconds.
- 9
Taste and adjust: if too tart, add up to 1–2 tablespoons more simple syrup; if too sweet, add a splash more lime juice (up to 0.5 tbsp). Gently stir after adjustments.
Finish & Garnish
- 10
Crown the drink with a small additional handful of crushed ice so it mounds slightly above the rim (traditional swizzle presentation).
- 11
Spoon the reserved 2 tablespoons passion fruit seeds/pulp over the top so seeds are visible. Add a lime wheel on the rim and a small mint sprig if using. Serve immediately with a straw or swizzle stick.
