Prepare glass

    Chill and fill

    Choose a highball or Collins glass. If desired, chill the glass in the freezer for 5–10 minutes. Fill the glass with fresh ice until nearly full (about 1 cup of ice).

Build drink

    Add alcohol (optional)

    If making an alcoholic version, pour 1.5 fl oz gin or vodka into the ice-filled glass. If using both spirits, use a total of 1.5 fl oz combined.

    Add bitters or syrup (optional)

    If using Angostura bitters or simple syrup, add 2 dashes of bitters or 0.25 fl oz simple syrup now, depending on desired complexity and sweetness.

    Top with Schweppes Premium

    Slowly pour 8 fl oz Schweppes Premium tonic (or Schweppes Premium mixer of your choice) over the back of a spoon or down the side of the glass to preserve carbonation and layering.

Garnish and finish

    Gently stir once with a bar spoon (1–2 slow turns) to integrate the spirit and mixer without flattening the bubbles. Squeeze the lime wedge lightly over the drink to release a few drops of juice, then drop the wedge into the glass. Slap the mint sprig once between your palms to wake its aroma and place it on top as a garnish.

Serve

    Serve immediately while cold and effervescent. Provide a straw if desired.
