    Prepare the ham

    If your Pata Negra arrives bone-in: place the ham on a stable carving stand or cutting board. If boneless and pre-sliced, arrange slices on a serving board. Using a long, flexible carving knife, remove any outer rind or hardened fat only where you will slice; leave a thin layer of fat on the ham to preserve flavor. Aim to slice paper-thin pieces (about 1–2 mm). Work from the hock toward the shank for bone-in pieces, keeping the blade at a very shallow angle. Place finished slices in loose, slightly overlapping folds on the serving board so slices stay moist.

    Bring to room temperature

    Remove the ham from refrigeration 30–45 minutes before serving so the fat softens and aroma opens. This will improve flavor and slicing quality. Keep covered loosely with a cloth until ready to carve.

    Prepare bread and cheese

    Lightly brush bread slices with 1 tbs olive oil. For a warm presentation, toast bread under a broiler or in a hot skillet 30–60 seconds per side until golden but not hard. Arrange thin Manchego slices alongside the ham. If using membrillo (quince paste), cut into small wedges to pair with cheese and ham.

    Toast almonds and prepare pickles

    Heat a small skillet over medium heat. Add almonds and toast, stirring, 3–4 minutes until fragrant and lightly golden. Remove and cool. Arrange cornichons or pickled peperoncini in a small bowl on the platter.

    Season and finish

    Lightly drizzle the remaining 1 tbs olive oil across the arranged ham slices—this adds sheen and helps carry flavor. Sprinkle smoked paprika sparingly over part of the board (not directly over large area of ham) and grind black pepper to taste over the plate. Scatter toasted almonds and microgreens or parsley as garnish. If desired, place a small dish of olive oil for dipping and a separate dish for the pickles.

    Serve the Presunto Pata Negra board at room temperature. Encourage guests to take thin slices of ham with a piece of bread and cheese; pairing a small piece of membrillo with Manchego and ham is classic. Offer chilled sparkling water, a dry fino or manzanilla sherry, or a light red wine as pairing options. Refresh bread as needed and replenish almonds and pickles during service.

    Store leftovers by wrapping the remaining ham loosely in parchment or a breathable cloth and keep in the coldest part of the refrigerator. For bone-in hams, cover the exposed cut surface with a thin layer of olive oil and cling film to slow drying. Consume within 5–7 days for best quality.
