    Prepare glass

    Choose a double old-fashioned or Collins glass. Moisten rim with a lime wedge (use about half the lime wedge). Spread the smoked salt (sal negro) in a shallow dish and press the moistened rim into the salt to coat evenly. Set the glass aside.

    Mix cocktail

    Fill a cocktail shaker with ice (about 3/4 full). Add 1.5 oz Tequila Olmeca Altos Plata, 0.5 oz mezcal, 0.5 oz Campari, 2 oz fresh grapefruit juice, 0.5 oz fresh lime juice and 0.25 oz agave syrup (optional).

    Shake

    Cap the shaker and shake vigorously for 10–15 seconds until the outside of the shaker is cold and well-chilled.

    Strain and serve

    Fill the prepared glass with fresh ice. Double-strain the shaken mixture into the glass over the ice to remove small ice shards and pulp.

    Garnish and finish

    Express a grapefruit peel or place a grapefruit wheel on the rim. Optionally run the grapefruit wedge lightly over the smoked-salt rim to add aroma. Serve immediately.
