Ginger Syrup

    Make the ginger syrup

    Combine sliced fresh ginger, sugar, and 1 cup water in a small saucepan. Add lemon peel if using. Bring to a gentle boil over medium heat, stirring until sugar dissolves. Reduce heat and simmer lightly for 10–12 minutes to extract ginger flavor. Remove from heat and let steep for 20–30 minutes for stronger flavor.

    Strain the syrup through a fine-mesh sieve into a heatproof container, pressing on solids to extract as much liquid as possible. Discard solids. Let syrup cool to room temperature, then refrigerate. Syrup will yield about 3/4 to 1 cup and keeps refrigerated for up to 2 weeks.

Assemble Ginger Ale

    Chill glass and prepare ice

    Fill the serving glass with 1/2 cup fresh ice and set aside. If you prefer a very cold drink, chill the glass in the freezer for 5–10 minutes before assembling.

    Combine syrup and citrus

    In a small mixing glass or measuring cup, stir together 3 tablespoons chilled ginger syrup and 1 teaspoon fresh lemon juice until combined. Taste and adjust: add up to 1–2 tablespoons more syrup for sweeter, spicier ginger character, or another 1/2 tsp lemon for brighter acidity.

    Top with soda

    Pour 2 cups chilled club soda or sparkling water over the ice in the serving glass. Slowly add the ginger syrup and lemon mixture to the soda so it layers briefly and disperses with gentle stirring.

    Garnish and serve

    Garnish with a thin slice of fresh or candied ginger, a lemon wheel or twist, and a mint sprig if using. Serve immediately with a straw or stirrer.
