    Place crushed ice into a shallow serving bowl or on a small platter to create a chilled bed for the caviar container. This keeps the caviar cold without direct contact to ice.

    Transfer the tin or jar of Oscietra caviar onto the bed of crushed ice and keep refrigerated until just before service. Do not let ice melt into the caviar.

    When ready to serve, open the caviar. Using a mother-of-pearl or wooden spoon (avoid metal), gently skim 20 g of caviar into a small chilled serving bowl or onto an individual spoon. Return the remaining caviar to the chilled bed of ice and keep covered.

Blinis & accompaniments

    If blinis are refrigerated or at room temperature, warm them briefly: heat a nonstick skillet over medium-low heat and add the butter. Warm each blini 20–30 seconds per side until just heated through and slightly puffed. Alternatively, warm in a 160°C (325°F) oven for 4–6 minutes. Do not crisp or brown aggressively.

    Arrange warmed blinis on a serving platter. Place a small dollop (about 1 teaspoon) of crème fraîche in the center of each blini.

    Top crème fraîche with a small pinch of finely chopped red onion or shallot and a few chopped chives to taste.

    Using the mother-of-pearl spoon, place approximately 1.5–2 g (about a small pea-sized mound) of Oscietra caviar on top of the crème fraîche on each blini. Alternatively, present the 20 g caviar in its bowl and allow guests to portion themselves.

    Garnish as desired with a tiny sprinkle of grated hard egg yolk, a few pieces of chopped egg white, or a small dill sprig on selected blinis.

    Serve immediately with lemon wedges on the side. Advise guests to squeeze only a light touch of lemon if desired—too much will overpower the caviar.

Plating & serving tips

    Keep the caviar chilled throughout service on the crushed-ice bed. Replace melted ice as needed. Serve small amounts at a time to maintain peak freshness.

    Provide mother-of-pearl, bone, or wooden spoons for serving to avoid metallic taste.

    Recommend one to two blinis per person as an amuse-bouche or hors d'oeuvre; adjust quantity if the caviar is the primary focus.
