Sushi rice
Rinse and cook rice
Rinse the short-grain sushi rice under cold running water, swirling with your hand, until the water runs mostly clear (about 4–6 rinses). Drain for 10 minutes. Combine rinsed rice and 1 2/3 cups water in a rice cooker or small pot. If using a pot, bring to a boil uncovered, then reduce heat to low, cover, and simmer 12–14 minutes. Remove from heat and let sit, covered, 10 minutes.
Season rice
While rice rests, warm rice vinegar, sugar, and salt in a small saucepan or microwave just until sugar dissolves (do not boil). Transfer cooked rice to a wide bowl, gently fold in the vinegar mixture with a wooden paddle or spatula while fanning the rice to cool and give a slight shine. Aim for sticky but separate grains. Cover with a damp towel and keep at room temperature while preparing other components (do not refrigerate).

Prepare salmon (optional light cure)
If you prefer a slightly firmer, seasoned salmon, toss the diced salmon with 1 tsp rice wine vinegar, 1/4 tsp sugar, and 1/8 tsp salt; refrigerate 10 minutes, then drain any liquid. Otherwise proceed with fresh sushi-grade salmon as-is. Pat salmon dry with paper towel.
Make spicy salmon mix
Dice or very finely chop 6 oz of the salmon into small 1/4-inch pieces. In a bowl, combine mayonnaise, sriracha, gochujang (if using), soy sauce, toasted sesame oil, and sliced green onions. Add chopped salmon and fold gently until evenly coated. Taste and adjust heat/salt — add more sriracha for spice or a touch more mayo for creaminess.
Assemble rolls (maki style)
Place a bamboo sushi mat on a work surface and wrap with plastic wrap. Place one nori sheet shiny-side down on the mat. With wet hands, spread about 3/4 cup of sushi rice in an even layer over the nori, leaving a 1-inch strip at the far edge free of rice. Lightly press the rice so it adheres but remains slightly airy. Sprinkle a few toasted sesame seeds over the rice if desired (for inside texture). Flip the nori so rice-side down (for inside-out roll). On the seaweed side, arrange a horizontal line across the lower third: 3–4 tbsp of the spicy salmon mixture, a few avocado slices, and cucumber sticks.
Roll and seal
Using the bamboo mat, lift the edge nearest you and begin rolling away from you, tucking the filling so the roll stays tight. Squeeze gently with the mat as you roll to form a firm cylinder. When you reach the 1-inch bare edge, moisten it with a little water to seal the roll. Repeat with the second nori sheet and remaining ingredients (reserve 2 oz salmon for topping).
Top & finish (optional baked/torched spicy salmon)
For a spicy-topped roll: thinly slice the remaining 2 oz salmon into small pieces and toss with a teaspoon of mayo and a little sriracha. Place a thin layer of the spicy salmon on top of the rolled sushi. Option A (torch): Gently torch the salmon topping until lightly charred. Option B (broiler): Place rolls on a foil-lined sheet, broil 1–2 minutes until topping is warmed and slightly bubbly (watch carefully). Alternatively leave raw for a fresh texture.
Cutting & serving
Using a very sharp knife dipped in water and wiped between cuts, trim the ends of each roll to neaten. Slice each roll into 6–8 equal pieces (aim for 8 pieces per roll for smaller bites). Clean the knife between cuts to prevent tearing. Arrange on a platter, garnish with toasted sesame seeds and thinly sliced green onion if desired. Serve with pickled ginger, wasabi, and soy sauce for dipping.
Storage
Consume fresh the same day for best texture. Refrigerate leftover components (rice, spicy salmon mix) separately up to 24 hours; assembled sushi will become soggy if stored.
