Marinate the chicken

In a bowl, combine 3 tbs soy sauce, 1 tbs mirin, 1 tbs sake (if using), 1 tsp grated garlic, 1 tsp grated ginger, 1/4 tsp sea salt and 1/4 tsp black pepper. Add the chicken pieces and mix thoroughly so each piece is coated. Cover and refrigerate for 30 minutes to 1 hour (up to 3 hours for deeper flavor).

Prepare coating

While chicken marinates, whisk together 3/4 cup cornstarch, 1/4 cup all-purpose flour and 1/4 tsp baking powder in a shallow bowl or rimmed plate. This dry mix will give a light, crisp crust.

Heat oil

Pour neutral oil into a heavy-bottomed pot or deep pan to a depth of about 2–2.5 inches (roughly 3–4 cups). Heat over medium-high until oil reaches 325°F (160–165°C) for the first fry. If you don't have a thermometer, test with a small pinch of coating — it should sizzle gently and rise slowly.

Coat and first fry (blanch fry)

Remove chicken from the marinade, letting excess drip off (do not pat completely dry). Dredge each piece evenly in the cornstarch-flour mix, shaking off excess. Fry in batches (do not overcrowd) for 3–4 minutes until pale golden and cooked through but not deeply browned. Maintain oil temperature around 320–330°F (160–165°C). Transfer to a wire rack set over a baking sheet to drain.

Increase heat and second fry

Raise oil temperature to 375°F (190°C). When hot, fry the partially cooked pieces again in batches for 45–75 seconds, until deeply golden-brown and crisp. This double-fry creates a crunchy exterior and juicy interior. Drain on a wire rack or paper towels briefly; keep warm in a low oven (200°F/95°C) if necessary while finishing remaining batches.

Soy-Garlic Sauce

While the chicken is resting after the first fry (or during the second fry), make the sauce. In a small saucepan over medium-low heat combine 2 tbs soy sauce, 1 tbs dark or low-sodium soy, 1 tsp sugar, 1 tsp rice vinegar, 2 tbs water, 2 minced garlic cloves and 1/2 tsp minced ginger. Stir and bring to a gentle simmer for 1–2 minutes to meld flavors.

Mix a 1/2 tsp cornstarch with 1 tsp cold water to make a slurry. Slowly whisk the slurry into the simmering sauce and cook for another 30–45 seconds until sauce thickens slightly to a glossy coating consistency. Remove from heat and stir in 1/2 tsp toasted sesame oil. Taste and adjust balance with a little more sugar or vinegar if desired.

If you prefer, toss the hot fried chicken pieces directly in the sauce to coat evenly (for saucy karaage), or serve the sauce on the side for dipping to keep the crust crunchier. For tossing: place chicken in a large bowl, pour warm sauce over and gently toss until evenly coated.

Garlic Mayo & Plating

Make the garlic mayo: in a small bowl combine 1/2 cup mayonnaise, 1/2 tsp grated garlic, 1 tsp fresh lime juice, 1/8 tsp salt and a pinch (1/16 tsp) black pepper. Whisk until smooth and adjust seasoning to taste. If the mayo is too thick, thin with a little water or extra lime juice, 1/4 tsp at a time.

Plate: arrange the karaage on a platter or individual plates. If you tossed the chicken in sauce, spoon any remaining sauce over the top. Drizzle or dollop garlic mayo alongside or pipe small quenelles on the plate. Sprinkle sliced scallions and toasted sesame seeds over the chicken. Serve immediately with lime wedges to squeeze over just before eating.

Storage and reheating note: leftover coated but unf sauced karaage reheats best in a 350°F (175°C) oven for 8–10 minutes to crisp. If sauced, the crust will soften; reheat gently in a skillet or oven to avoid sogginess.
