Prepare squid
If not already cleaned, remove innards and quill from squid tubes. Rinse and pat dry thoroughly with paper towels. Slice tubes into 1/2-inch rings and reserve tentacles (leave intact or cut in half if large). Dry again—moisture prevents proper crisping.
Marinate
In a bowl, combine grated garlic, grated ginger, light soy sauce, mirin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add the squid rings and tentacles and toss to coat. Marinate on the counter for 10 minutes or in the refrigerator for up to 30 minutes; do not exceed 30 minutes so squid doesn’t become rubbery.
Make coating mix
In a shallow bowl or wide dish, whisk together cornstarch, all-purpose flour, and baking powder. Add the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper and mix thoroughly.
Heat oil
In a deep, heavy-bottomed pot or deep fryer, heat about 1–1.5 cups neutral oil to 350°F (175°C). If you don't have a thermometer, test by dropping a pinch of coating mix into the oil—if it sizzles and rises steadily, it's ready.
Coat squid
Remove squid from marinade and let excess drip off. If marinade is very wet, pat lightly with paper towel. Working in small batches to avoid crowding, toss squid pieces in the starch-flour mixture to thoroughly coat. Shake off excess.
Fry (first and second fry)
Fry the calamari in batches: lower the squid into the hot oil and fry for about 45–60 seconds until pale golden and puffed but not deeply browned. Remove to a wire rack or paper towel-lined tray and let rest 1–2 minutes. For extra crispiness (karaage technique), return the oil to 375°F (190°C) and fry a second time for 20–30 seconds until golden brown and crunchy. Remove to a rack and season immediately with a light sprinkle of salt if desired.
Keep warm
If frying multiple batches, keep cooked calamari on a baking sheet in a single layer in a 200°F (95°C) oven to hold while finishing remaining batches so they stay crisp.
Tobiko Mayo
In a small bowl, combine Japanese mayonnaise, tobiko, lime juice, soy sauce, and optional Sriracha. Stir gently to incorporate the tobiko without crushing all the eggs—some should remain whole for texture. Taste and adjust seasoning or heat. Refrigerate until ready to serve; bring to room temperature for 10 minutes before serving if chilled.
