Sushi Rice & Seasoning
Rinse the rice
Place short-grain sushi rice in a fine-mesh sieve or bowl and rinse under cold water, swirling and draining until the water runs almost clear (about 4–6 rinses). This removes excess surface starch.
Soak and cook
Combine the rinsed rice and 1.7 cups water in a medium saucepan. Let the rice soak for 20–30 minutes if you have time (recommended for even cooking). Bring to a gentle boil over medium heat, then reduce heat to low, cover, and simmer for 12–15 minutes until water is absorbed. Remove from heat and let rest, covered, for 10 minutes.
Make sushi vinegar
While rice rests, combine rice vinegar, granulated sugar, and fine sea salt in a small bowl. Stir until sugar and salt dissolve.
Season the rice
Transfer hot rice to a large shallow bowl or hangiri if available. Gently fold the vinegar mixture into the rice using a wooden spatula, fanning the rice as you fold to cool it quickly and give it a shiny texture. Stop folding when the rice is glossy and slightly sticky. Cover with a damp towel and keep at room temperature until ready to assemble (do not refrigerate).

Prepare fillings
Peel and halve the avocado, remove pit, and slice into 1/4-inch thick slices. Cut cucumber into long matchsticks: trim ends, quarter lengthwise, remove seeds if large, and slice into thin sticks. If using carrot, julienne into thin sticks. Toss avocado slices lightly with 1 tablespoon mayonnaise to prevent browning and add creaminess.
Prepare mat and nori
Place a bamboo rolling mat on a flat surface and cover it with plastic wrap to prevent sticking. Keep a small bowl of water nearby to wet your fingers and knife between cuts.
Place nori and rice
Position one nori sheet shiny side down on the wrapped mat. Wet your fingers and take about 3/4 cup of seasoned sushi rice (adjust slightly) and spread it evenly over the nori, leaving a 1-inch strip of bare nori at the far edge. Press gently to form an even layer about 1/4-inch thick. Sprinkle with a pinch of toasted sesame seeds and drizzle about 1/2 teaspoon of mayonnaise in a thin line across the center (or spread a thin line with a spoon).
Add fillings
Across the center of the rice layer, place a line of cucumber sticks (about 3–4 per roll), a few carrot sticks if using, and a line of avocado slices (use about 6–8 thin slices per roll). If you prefer a creamier texture, add a thin drizzle of the remaining mayonnaise over the avocado.
Roll the sushi
Lift the edge of the mat nearest you and begin to roll the nori over the fillings, tucking gently to keep the fillings tight. Apply even pressure with the mat and continue rolling until you reach the bare nori edge; wet that edge lightly with water to seal the roll. Use the mat to firm the roll by pressing gently along its length for 10–15 seconds.
Slice
With a very sharp knife moistened in the bowl of water, trim the exposed nori edge if uneven and slice the roll into 6–8 equal pieces. Wipe the knife between cuts to keep slices clean and prevent sticking. Repeat the process with remaining nori and fillings to make a total of 4 rolls.
Finish and serve
Arrange avocado kappa rolls on a platter. Garnish with a light sprinkle of toasted sesame seeds and small dollops of mayonnaise if desired. Serve immediately with pickled ginger, wasabi, and soy sauce on the side.
Tools & Serving
Keep the bamboo mat covered with plastic while rolling to prevent rice from sticking. Keep a damp towel over finished rolls if there is a wait before serving to prevent drying. Serve within 1 hour for best texture; leftover rolls can be wrapped tightly and refrigerated up to 24 hours but may become soft.
