Cook the Tapioca Pearls

In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of tapioca pearls and stir gently. Reduce heat to medium and cook for 20-25 minutes or until the pearls become translucent and chewy.

Prepare the Syrup

In a small bowl, mix 1 tablespoon of brown sugar with 2 tablespoons of water until dissolved. Set aside.

Once the pearls are cooked, drain them and rinse under cold water to stop the cooking process. Mix the pearls with the prepared syrup to sweeten.

In a bowl, combine 2 tablespoons of matcha powder with 1 cup of hot water. Whisk vigorously until smooth and frothy.

Add 1 tablespoon of honey or sugar to the matcha and stir until fully dissolved.

In a separate glass, pour in 1 cup of milk (dairy or non-dairy) and then add the sweetened matcha mixture.

In a large glass, add a generous amount of the cooked tapioca pearls at the bottom. Pour the matcha milk mixture over the pearls.

If desired, add ice cubes and top with whipped cream. Stir gently to combine.
