    Prepare all produce: julienne the carrot, thinly slice the cabbage, finely chop mushrooms, thinly slice scallions, mince garlic and grate ginger.

    Heat 1 tablespoon vegetable oil in a large nonstick skillet or wok over medium-high heat until shimmering.

    Add minced garlic and grated ginger and cook 15–30 seconds until fragrant, stirring so they don't burn.

    Add chopped mushrooms and cook 2–3 minutes until they soften and release liquid.

    Add julienned carrot and sliced cabbage. Stir-fry 2–3 minutes until vegetables are tender-crisp.

    Stir in bean sprouts and sliced scallions and cook 30–45 seconds just to wilt the sprouts.

    Season the filling with 1½ tablespoons soy sauce, 1 teaspoon sesame oil, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir to combine and taste; adjust seasoning if needed.

    Remove the skillet from heat and transfer the filling to a bowl to cool for 8–10 minutes. Make sure the filling is warm but not hot — too-hot filling will make wrappers soggy.

Wrappers & Assembly

    Set up an assembly station: a clean work surface, a small bowl of water, and a small dish with 1 teaspoon cornstarch mixed into 1/4 cup water (this is the glue).

    Place one spring roll wrapper on the work surface in a diamond orientation (one corner pointing toward you).

    Spoon about 3 tablespoons of the cooled filling near the corner closest to you, leaving a 1-inch border on each side so you can fold cleanly. (For larger wrappers or if you prefer more filling, use up to 4 tablespoons.)

    Fold the bottom corner up over the filling, then fold both side corners toward the center, creating an envelope.

    Brush a thin line of the cornstarch glue along the top corner edge and roll the wrapper tightly to seal. Press seam to ensure it adheres. Repeat with remaining wrappers and filling to make 3 spring rolls.

    Place assembled rolls seam-side down on a parchment-lined tray and refrigerate for 10–15 minutes to help them firm up (optional but reduces splitting when frying).

Frying

    Pour about 1½–2 cups neutral oil into a heavy-bottomed skillet or saucepan to reach ~1–1½ inches deep. Heat oil over medium heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of wrapper into the oil — it should sizzle and rise steadily without browning immediately.

    Remove the rolls from the fridge. Fry 2–3 spring rolls at a time (do not overcrowd) for 2.5–4 minutes, turning occasionally, until golden brown and crisp on all sides. Adjust heat as needed to maintain oil temperature around 325–350°F so they cook through without burning.

    Use a slotted spoon or spider to transfer fried spring rolls to a wire rack set over a tray or paper towels to drain excess oil.

    Let rest 1–2 minutes then serve hot with sweet chili sauce, soy-vinegar dipping sauce, and lime wedges.
