    Prepare aromatics and vegetables

    Finely chop green onions, mince garlic, grate ginger, finely dice water chestnuts and rehydrated shiitake mushrooms. Keep everything ready in a small bowl.

    Combine proteins

    In a large bowl, place the ground pork and crab meat. Break up the meats with a spoon or bench scraper so they are evenly mixed but not overworked.

    Season and bind

    Add the chopped aromatics (green onion, garlic, ginger, water chestnuts, mushrooms) to the meat. Add soy sauce, sesame oil, Shaoxing wine, sugar, salt, white pepper, egg white and cornstarch. Mix gently but thoroughly until the mixture becomes slightly sticky and cohesive (about 30–60 seconds). Taste-cook a small pinch in a skillet if desired to check seasoning and adjust salt or soy.

Wrappers & assembly

    Prepare wrappers

    Cover wonton wrappers with a damp towel to keep them from drying out. Lightly brush or moisten the edges of each wrapper with a little water or a few drops of vegetable oil to help sealing.

    Shape shumai

    Place one wrapper flat in your palm. Put about 1 level tablespoon (roughly 15–18 g) of filling in the center. Gather the wrapper edges up around the filling, leaving the top exposed, and gently press so the dumpling stands upright with an open top (traditional shumai shape). Press the base slightly to flatten so it sits steady. Repeat with the remaining wrappers and filling; this recipe makes about 24–30 shumai depending on portion size.

    Optional topping

    If using panko or minced carrot, lightly press about 1/4 tsp onto the exposed top of each shumai for color and texture.

    Prepare steamer

    Fill a wok or large pot with about 1–2 inches of water (or as needed) and bring to a gentle boil. Line bamboo steamer baskets with cabbage leaves or parchment rounds to prevent sticking. Arrange shumai in the steamer basket in a single layer, leaving about 1/2 inch between each.

    Steam shumai

    Place the steamer basket over simmering water, cover, and steam for 6–8 minutes, until the pork is cooked through (internal temperature 160°F/71°C) and the filling is firm and opaque. For smaller shumai start checking at 5 minutes; avoid over-steaming which can dry them.

    Rest briefly

    Carefully remove the steamer from the heat and let shumai rest, covered, for 1 minute before serving to settle juices.

Dipping sauces & serving

    Prepare sauces

    Place soy sauce in a small dipping bowl. Mix hot mustard with a drop of water if very thick, and serve on the side. For a tangy option, combine soy sauce and rice vinegar or offer both separately.

    Transfer shumai to a serving platter. Serve hot with soy sauce and hot mustard alongside. Garnish with additional chopped green onion if desired.
