    Prepare scallops

    Pat the scallops very dry with paper towels. Remove and discard the small side muscle if present. Season both sides lightly with kosher salt and freshly ground black pepper.

    Optional light dusting

    If you want an extra golden crust, lightly dust each scallop with the 2 tablespoons of flour and shake off excess. This step is optional and keeps a crisp exterior.

    Sear scallops

    Heat a large sauté pan over medium-high heat until hot. Add 2 tablespoons neutral oil and swirl to coat. When oil is shimmering (but not smoking), add scallops spaced so they aren't touching. Sear without moving for 1.5–2 minutes until a deep golden-brown crust forms. Flip and add 1 tablespoon butter; cook the second side 1–1.5 minutes until just cooked through (opaque in center). Total cook time about 3–4 minutes depending on size. Transfer scallops to a warm plate and tent lightly with foil while you make the sauce.

Ginger Sauce

    Prepare aromatics and sauce base

    In the same pan used for scallops (leave brown fond), reduce heat to medium and add the julienned ginger and the white parts of the sliced green onions. Sauté 30–45 seconds until fragrant. Add minced garlic and cook 15–20 seconds more, taking care not to burn.

    Deglaze and combine

    Add 1/4 cup stock (or water), soy sauce, rice vinegar, mirin, and the brown sugar to the pan. Stir, scraping up browned bits from the bottom of the pan. Bring to a gentle simmer.

    Thicken sauce

    Whisk the 1/2 teaspoon cornstarch into the 1 tablespoon cold water to make a slurry. Slowly pour the slurry into the simmering sauce while whisking. Cook 1 minute until the sauce slightly thickens to coat the back of a spoon. If needed, simmer an additional 30–60 seconds to reach desired consistency.

    Finish sauce

    Stir in toasted sesame oil and red pepper flakes (if using). Taste and adjust seasoning—add a pinch more sugar if too sharp or a splash more soy sauce for saltiness. Add the green parts of the sliced green onions and remove from heat.

    Coat scallops

    Return the seared scallops and any accumulated juices to the pan, spooning the ginger sauce over them to warm through for 30–45 seconds. Do not overcook; scallops should remain tender.

Garnish & Serve

    Transfer scallops to a serving platter or individual plates. Spoon remaining ginger sauce over the scallops. Garnish with cilantro leaves if using and serve with lemon or lime wedges on the side to squeeze over just before eating.

    Serve immediately with steamed rice or wilted greens. Leftover scallops are best enjoyed the same day; sauce can be refrigerated up to 2 days.
