Press and prepare tofu
Wrap the 400 g block of firm tofu in clean kitchen towels or paper towels and place a weighted cutting board or pan on top for 15–30 minutes to press out excess water. After pressing, cut tofu into 8 even rectangles (about 2 cm thick). Pat pieces dry on all sides.

Mix dry coating
In a shallow bowl combine 6 tbs cornstarch, 2 tbs all-purpose flour, 1 tsp salt and 1/2 tsp black pepper. Toss each tofu piece gently in the dry mixture to evenly coat all sides, shaking off excess.

Pan-fry tofu
Pour about 1 cup neutral oil into a large nonstick or cast-iron skillet and heat over medium-high until shimmering (about 180°C / 350°F or when a pinch of coating sizzles). Add tofu pieces in a single layer without crowding. Fry 3–4 minutes per side until golden brown and crisp, turning gently with a spatula. Adjust heat to prevent burning. Transfer fried tofu to a plate lined with paper towel to drain. Wipe skillet clean and reserve for sauce.
Sakura Ginger Sauce

Prepare sakura and flavor base
If using pickled sakura blossoms, rinse briefly to remove excess brine and finely chop. In the reserved skillet, add 1 tbs neutral oil or use 1 tbs of the drained frying oil and heat over medium. Add 1 tbs finely grated ginger and 1 tsp minced garlic; sauté 20–30 seconds until fragrant but not browned.

Build the sauce
Add 2 tbs sakura (paste or chopped blossoms), 3 tbs soy sauce, 2 tbs mirin, 1 tbs rice vinegar, 1 tbs sugar and 120 ml water to the pan. Stir to combine and bring to a gentle simmer, scraping up any browned bits. Taste and adjust: add a little more sugar for sweetness or 1/2 tbs more soy for saltiness as desired.

Thicken sauce
Make a slurry by mixing 1 tbs cornstarch with 1 tbs cold water until smooth. Slowly whisk the slurry into the simmering sauce; cook 1–2 minutes until sauce thickens to a glossy, pourable glaze. Remove from heat and stir in 1/2 tsp sesame oil for aroma.

Coat tofu in sauce
Return the fried tofu pieces to the skillet and gently spoon or toss the sakura ginger sauce over them so each piece is evenly coated. Cook over low heat for 1 minute to marry flavors, turning pieces once. Be gentle to preserve crispness—do not simmer vigorously.
Garnish & Serving

Transfer coated tofu to a serving plate. Sprinkle 2 tbs thinly sliced scallions and 1 tsp toasted sesame seeds over the top. If available, scatter a few micro shiso leaves or small sakura petals for visual and aromatic finish.

Serve immediately while the tofu is warm and the exterior remains slightly crisp. Sakura Tofu pairs well with steamed rice or a light soba salad.
