For Japanese White Rice

Rinse the rice
Place 2 cups short-grain white rice in a large bowl. Fill with enough cold water to cover the rice by about 1 inch. Stir the rice gently with your hand in a circular motion for 30–45 seconds until the water becomes cloudy. Carefully pour off the cloudy water (use a sieve if needed). Repeat this rinsing process 3–5 times until the water runs noticeably clearer but may remain slightly milky.

Soak
After the final rinse, add 2 cups fresh cold water and let the rice soak for 30 minutes at room temperature (longer in cooler kitchens). Soaking hydrates the grains for even cooking and a glossy texture.

Measure and add cooking water
Drain the soaking water completely, then transfer the rice to a heavy-bottomed pot or rice cooker. Add 2.2 cups fresh cold water (this slightly less-than-1:1.1 ratio is for stovetop; follow your rice cooker's recommended water if using one). Optionally add 1/4 tsp salt and gently level the rice.

Cook on stovetop (if using pot)
Cover the pot and bring to a boil over medium-high heat. As soon as it boils and steam appears at the lid edge, reduce heat to the lowest setting and simmer undisturbed for 12–13 minutes. Do not lift the lid.

Let rest
Turn off heat and let rice steam in the covered pot for 10–12 minutes. This resting step finishes cooking by steam and firms the texture.

Fluff and serve
Remove lid, use a rice paddle or wooden spoon to gently fold and fluff the rice from the bottom to release excess steam and separate the grains. Serve hot.
For Japanese Brown Rice

Rinse the rice
Place 2 cups brown short- or medium-grain rice in a large bowl. Fill with cold water and stir gently for 30–45 seconds. Pour off cloudy water and repeat rinsing 3–4 times until water is much clearer.

Soak
After the final rinse, cover the rice with about 3 cups fresh cold water and allow to soak for at least 1 hour at room temperature, or up to 6–8 hours. Soaking reduces cooking time and improves tenderness.

Drain and add cooking water
Drain the soaking water thoroughly. Transfer rice to a heavy-bottomed pot or rice cooker and add 2.5 cups fresh cold water. Optionally add 1/4 tsp salt and level the surface.

Cook on stovetop (if using pot)
Cover and bring to a gentle boil over medium heat. Once boiling, reduce to the lowest heat and simmer, undisturbed, for 30–35 minutes. Do not lift the lid while cooking.

Turn off heat and leave the rice covered to steam for 15 minutes to finish cooking and distribute moisture evenly.

Remove lid, gently fluff rice with a rice paddle or wooden spoon, separating grains and releasing steam. Serve hot.

Using a rice cooker
If using a rice cooker: follow the cooker’s white- or brown-rice setting after rinsing and soaking (white rice: shorter soak or none; brown rice: longer soak recommended). Use the coterminous water markings or the water quantities provided above as a guideline; results may vary with cooker model.
