    Prepare vegetables

    Wash and dry the salad greens thoroughly (use a salad spinner or pat dry with paper towels). Tear larger leaves into bite-sized pieces. Place 6 cups of mixed greens into a large mixing bowl.

    Slice and shred

    Thinly slice 1/2 an English cucumber and add to the bowl. Halve 1 cup cherry tomatoes and add. Peel and julienne or shred 1 carrot and add along with 1 cup thinly sliced red cabbage and the thinly sliced white/light green parts of 2 green onions.

    Optional add-ins

    If using avocado, slice 1 avocado just before serving to avoid browning and gently fold into the salad. Sprinkle 2 tsp toasted sesame seeds over the salad.

Sakura Ginger Dressing (famous)

    Combine base ingredients

    In a medium bowl or a jar with tight lid, combine 3 tablespoons rice vinegar, 2 tablespoons soy sauce, 1 tablespoon mirin, 1 tablespoon honey (or simple syrup), 1 teaspoon sesame oil, and 1 teaspoon freshly grated ginger. Add 1 teaspoon finely minced pickled sakura or pickled ginger and 1/2 teaspoon minced garlic.

    Emulsify dressing

    Whisk in 3 tablespoons neutral oil (grapeseed or vegetable) until combined and slightly emulsified. If using mayonnaise for a creamier version, whisk in 1 tablespoon now until smooth. Taste and adjust with 1 teaspoon fresh lemon juice, 1/4 teaspoon salt, and a pinch (1/8 tsp) black pepper. Adjust sweetness or acidity as desired by adding more honey or vinegar in 1/2 teaspoon increments.

    Rest and meld

    Let the dressing sit for at least 10 minutes at room temperature to allow flavors to meld. If you prepared it ahead, refrigerate in a sealed jar for up to 5 days; bring to room temperature and whisk/shake before using.

    Dress the salad

    Just before serving, drizzle enough dressing over the salad to lightly coat the greens (about 3–4 tablespoons for 4 servings). Toss gently but thoroughly to distribute the dressing. Add avocado if using and give a final gentle toss.

    Serve

    Divide the dressed salad among 4 plates or bowls and finish with a final sprinkle of toasted sesame seeds and an optional extra pinch of green onions. Serve immediately.
