    Toast and prepare base

    Split bagels and toast until golden and crisp, or toast sourdough slices until edges are crisp. If using, spread 1 tbs softened butter on warm toast for extra richness; otherwise leave plain.

Cream Cheese Spread

    Soften and whip cream cheese

    Place the room-temperature cream cheese in a medium bowl. Add 2 tbs milk or cream and beat with a fork or small whisk until smooth and spreadable (about 1–2 minutes).

    Season the spread

    Stir in 1 tsp lemon juice, 1 tsp kosher salt, 1 tsp freshly ground black pepper, and 2 tbs finely chopped chives. Taste and adjust seasoning — add up to another 1/2 tsp salt or a dash more lemon if needed.

Toppings - Classic Philadelphia Style

    Assemble smoked salmon toppings

    Lay 3 oz thinly sliced smoked salmon evenly over the cream cheese on each toasted piece (use all salmon across the two halves). Arrange 2 tbs thinly sliced red onion, 1 tsp capers, and optional tomato and cucumber slices over the salmon as desired.

    Add fresh herbs

    Scatter small sprigs or a pinch of fresh dill over the top for a bright finish.

    Finish with a crack of fresh black pepper to taste and serve with a lemon wedge alongside. Squeeze a little lemon over the salmon just before eating for brightness.
